Opening of Pink Hermit by chef Jean-Georges Vongerichten in Nashville

The Pink Hermit opened Tuesday in downtown Nashville, in collaboration with Michelin-starred chef Jean-Georges Vongerichten.

Stationed at the Hermitage Hotel, it offers pastries in the morning, casual dining and takeout during the day, and small plates and drinks in the evening, according to a press release from the cafe. The café adjoins the hotel’s flagship restaurant, Drusie & Darr by Jean-Georges.

“The Pink Hermit’s name is derived from the hermitage’s definition of a ‘secluded retreat’, and the intimate space, clad in pale pink and gray marble, will welcome guests with casual indoor seating and cafes outside in hot weather,” the statement said.

The cafe is overseen by the hotel’s executive chef, Chef Kelsi Armijo, and will feature Jean-Georges classics like chia seed pudding, roasted beet Greek salad, egg toast with caviar herbs, crispy sushi and black truffle pizza.

The Pink Hermit will offer you small plates, champagne and cocktails in the evening.

“It’s the perfect accompaniment to Drusie & Darr and in between the options are endless,” Vongerichten said in the release. “You can have a seated dining experience at Drusie & Darr, stop for lunch or after work for champagne and light snacks at Pink Hermit. Dee Patel, the hotel’s general manager, hopes the Pink Hermit will bring something new to her neighborhood.

“The Pink Hermit will add a playful, modern twist to the hotel’s timeless elegance and add another unique Hermitage element to our hotel-wide design refresh,” Patel said in the statement. .
